I used to work in a restaurant where I took more than ten tables and extended my section. It was very stressful, but I made great money.
Nowadays, I work in a restaurant where I take seven tables in my shifts, but no stress, no running around, and making average money.
Which one is more important for you? Making good tips; being stressed or making average money and not being stressed?

I could do 25 covers and walk away with a measly $40 on Breakfast shift But on dinner shift I could easily make $100 on 10 covers no shift differential pay But some management was to be desired

I am not sure it's either/or. In ALL roles, regardless of shift, there are busy times & down times. It is RARELY only one or the other. A steady diet of either is not healthy long-term. For me, I like to be "moderately" busy all the time. Certainly, I've experienced too slow & too hectic. As long as each of those are limited, that's okay. I stopped working in churches, for example, because there wasn't enough work to keep me busy. On the flip side, I used to plan meetings for 65+ seniors managers - not down the hall, but across the country. It was necessary to start work on the meetings at least 9 months out. The last 6 weeks prior to the meeting, I would be working 10-12 hours a day & going in on Saturdays. HOWEVER, I could certainly do that for that brief period.
