Over qualified means they can't pay you what you are worth....so you have to take a lower wage of what you are use to bringing home

My response would depend on whether or not my over qualifications are within the field I am interviewing for, or outside of it, unrelated. If unrelated to the position I'm interviewing for then something as simple as "I'm a lifelong learner that thrives on learning new things and expanding my skill set in all kinds of directions. Just because I'm highly qualified in a certain field, doesn't mean I shouldn't learn to be just as qualified in another!". Then, if my qualifications are related to the current job interview I might say something like "sometimes in order to keep growing and strengthening your skills, you just have to get back to the basics. Remember the foundation, the big picture."
