you should have done your reserch and already know what that type job pays in your area.

I smile & joke, "I have long understood whomever starts talking money first, loses..." then ask what is the range they are planning? think of a couple more deflections... if cornered into giving a number, give them a range for when you start & also a range for a year or two into the future, after you've proven what you can do.
