Staying in Scope

Having a point person and a deadline to keep mind helps to stay focus.
Scope creep typically happens because you fail to define the business requirements accurately. Yes, there are times when the director or some other member of the client team decides they want a bell or whistle in mid-implementation, but if you always ask the next question in your define phase and build a complete BR spec, then there shouldn't be any surprises down the road.
Have the client sign off on the BR indicating you have captured all their requirements. Then, build your FRS out based on the BR and make sure you have addressed every point in the BR. Have the key decision maker sign off on the FRS and from that you build your project plan. Lastly, have the client sign off on the project plan and be sure to put in writing that any additional features requested during the course of implementation will be done after go-live. That way you can plan for it and still maintain control of the scope of the originally agreed upon project plan.
So, simple answer:
Ask the right questions, provide a FRS and project plan that the client signs off on, and hold them to it. Give them what they want after the project goes live.
