Multitasking, as a line cook they need to be able to handle multiple things at a time. One second they have maybe 3 things on line then someone needs a change or something on the fly. as the line cook need to remember all ticket orders, changes to which tickets are paired with which of your pans. Keeping a clear head is essential. Also clear communication with servers expo and and other cooks. It gets hot and it is fast pace. So ask if they can move quickly and efficiently, while communicating and multitasking. Also ask about how they focus and how their mobility is. If they seem to be a good fit ask them to come in and showcase how they work.

Time management skills. Open-mindedness. Critical thinking skills. Eagerness to learn and advance yet patience to learn thoroughly and completely. Confidence and humility. Understanding on that company’s/owners way of business and understanding the job they hired for. Patience. Willingness to start at the bottom and prove yourself. Knowing when to stand your ground (what you will allow yourself to put up with/be treated) and Knowing when to walk away for your own sense of self
