It all really depends on what area of culinary work you are wanting to get into. If retirement, schools, and hospitals you need dietary experience. But most important is knife skills amd knowing temperatures.

food temperature is very important. when dealing with what ppl consum u have to make sure that things are properly cooked and stored to minimize illnes, diseases, and bacteria. u need to carter to individuals likeing and request while making a name for ur self opening them up to ur particular flavors and exploring new desire taste. and portions so much food is wasted at the same time so many health eating issue's will impact humanity
First some states require a food handlers permit. Easy to get. Know how to handle knives. Learn everything about kitchen safety. Work on speed and reading, understanding tickets. Every place has different ways they do tickets. Do a good job on prepping before a rush. After time you will know how much to prep. Communication is a must in a good kitchen. When you must walk back someone always say "Behind You", and this is a big must do, always FOLLOW RECIPES!!! I've been doing this for about 40yrs and there's alot I can tell you. Main thing is listen very closely to the person that is training you. Every kitchen is different and run differently. I hope that this helps you
