I personally went through an apprenticeship when I was 17 and the man who introduced me to meat cutting told me he can show me how to cut but it was mostly just doing it and learn what cuts come from where on an animal most of the new meat cutters couldn't tell you the anatomy of an animal they are processing when I started the meat came in whole we had to break it down then cut it case ready good luck
