That you're use a industrial dishwasher machine, sometimes your hand wash soaking might be needed for pot, you're gonna change dishwasher water every 30 mins, for grease build up etc, especially when it comes to wine glasses or drink ware you don't want greasy glasses or dishes period, trash takeout is apart of the position, keep dishwasher area clean , spray food debris first than enter in the machine, that'll keep food build up out the water n dish tray , you'll also keep dishwasher power soap and sanitizer filled at all times both contributes to the dishwasher for sparkling looking dishware, good luck!
