Miguel, have you considered working for Amtrak in their dining car? My husband was the chef on the dining car for the Chicago/Seattle run. He did that for seven years, five days on the train, five days off. You'd have two cooks working under you, great pay and benefits. You've already worked lead line so you're qualified if you're ready to take a step up.

From 10 to 2pm and there will multiple companies in the hospitality industry. Don't forget to update your resume, have questions, and have a elevator pitch.
