My parents ran a restaurant for over 23 years and it was a blast Steven Ransom but it's a LOT of work and a huge undertaking. You definitely need to be 100% committed!

This type of work sounds interesting. However, if I were have that type of funding, I would rather open a new lab dedicated to spacecraft research or workplace studio as a lab director rather than opening a new restaurant. The environment would be similar to that of a nitty gritty Warehouse or Machine Shop with that of a University lab and makerspaces found in libraries. Residing at this place as my second or even third home as the director with 7-8 other employees running around would be my dream job. I would expect the business to last around 3-5 years or so before everyone decided to move on.
