Some bartenders and servers would rather go by a nickname than their full name. There is more to it, even though it could seem fake.
We have served a lot of people during the day and week in our roles as servers and bartenders. Some restaurant workers decide to keep their personal and professional life apart.
Some of them have odd or hard-to-pronounce actual names. When the server tells you their name and then continues to pronounce it that way for ten minutes, it doesn't feel right. Yes, it affects the atmosphere.
Additionally, it is safer for us to defend ourselves against the creeps because we serve a varied range of people.
Please let us know whether you prefer to use a nickname or your new name.
