In this day and age what type of paper should you use to print your resume? And if it is 2 pages, is it better to print on separate pages or two-sided?

Kelly, I would say 2 pages, but I caution you not to go long. Use bullet points, and keywords, and remember the person reading it may have a limited attention span. If you come off wordy, they will toss it away, essentially take the emotion out of the resume. Most people apply electronically, and that is because employers find the resumes easier to go through.
